My passion for food stems from being third generation professional chef in an Italian immigrant family. As a child I remember there always being a big pot of something wonderful on the stove. It was those aromas and flavors that inspired me to learn all I could about creating great food.
When I was sixteen years old, I was fortunate enough to have met a very talented European pastry chef who taught me the art of baking. At eighteen, I sold my first tiered wedding cake.
After college, I took a position that sent me to Europe for approximately two years. While there I was able to enhance my true passion, cooking. My interest in learning firsthand about the cuisine and cultures of different countries has taken me to Spain, France, Italy, Morocco, Turkey, Trinidad and Tobago, Central America and the Caribbean. My travels around the world have greatly influenced me and added diversity to my primarily Mediterranean palate.
When I returned to The States, I went back to school to receive a degree in Food Sciences in Seattle, Washington. Since then I have held positions as saucier, sous chef and chef de cuisine in both large and small five star hotels, restaurants, and a large private resort in the Seattle area. My last job before leaving The States was catering for Google in Seattle, where I was supervising cooks and preparing meals for the Google employees.
After more than thirty years experience working in all aspects of food service, I find that my passion for eating great food is exceeded only by my passion for creating fabulous dishes and sharing with others what I have learned over the years.
Presently, I am enjoying living in Playa del Carmen, Mexico and immersing myself in the diversity of Mexican cuisine.
